Chocolate Chunk Cookies
Chocolate Chunk Cookies were one of the first treats I made when I was a child. To this day, I still love the smell of vanilla and the chocolate baking. Undeniably comforting.
My favourite kind of cookies are the soft chewy centered ones with a slightly crispy outside. As I type this I feel the need to bake some. Luckily, I keep a stash of cookie balls in my freezer for these Cookie Emergencies. Yes, a Cookie Emergency is a thing in our home. It could strike at any moment and the only way to sort it out is to pop some cookie balls in the oven and BAKE!
So when you make these Chocolate Chunk Cookies, do store some away in the freezer so you will be able to sort out any Cookie Emergencies that crop up. Just pop the cookie balls in a zippy bag and keep in freezer for up to a month. Write a date in the bag so you know when they were made or when you need to finish them depending on what you prefer. Though I suspect these will get eaten within the month!
I feel that chocolate chunk cookies are a good way to start your journey into baking. Easy to make and super quick. All you will need to do is make sure the butter is at room temperature before you begin.
A few tips before you start:
- Ensure you do not overmix your dough. Think about blending the butter and sugar, it should be a thick paste.
- Chill the cookie dough for at least 15 minutes before baking. If the dough is not chilled long enough, the cookies will spread …… and you may end up with a big tray sized cookie. It will still taste amazing. So don’t worry too much if this happens.
- Use a big spoon (not a whisk) …… it’s the most suitable tool, be it wooden or metal.
I get asked this question often too. Can I add in nuts? Yes you can, add about half a cup of the nutsof your choice. I enjoy walnuts.
And yes, if you would like to top them with M&Ms you can . Flatten the dough ball slightly so it is flat enough to lightly press some M&Ms into the cookie.
